- 1 bag corn tortilla chips
- 1 lb. ground beef
- 1 packet taco seasoning
- ¼ cup water
- 2 tablespoons olive oil
- ½ can vegetable refried beans optional
- 2 cups triple cheddar cheese or your favorite cheddar cheese.
- 2 cups shredded iceberg or romaine lettuce
- 1 tomato large
- ¼ cup black olives slices
- ¼ cup corn drained
- 3 tablespoons jalapenos
- ¼ cup cilantro chopped fresh for serving
- ¼ cup sour cream
Preheat oven to 350F.
In a large skillet on medium-high heat place the olive oil then sear the ground beef for about 6-7 minutes or until cooked.
Pour 1/4 cup water over the beef and mix in 1 packet of taco seasoning and 1/2 can of refried beans.
Prepare a large baking sheet with parchment paper then place the tortilla chips in an even later.
Top the tortilla chips with an even later of the ground beef and bean mixture, then top with a generous amount of shredded cheese (about 2 cups). Place in the oven for about 10 minutes, then broil for 1-2 minutes if needed for the cheese to melt.
Remove the pan out of the oven and begin layering your favorite toppings like lettuce, tomatoes, corn, jalapeño, olives, sour cream then garnish with cilantro. Enjoy immediately.
