Tiramisu Chia Seed Pudding

Enjoy the indulgent flavors of tiramisu in a healthy, make-ahead pudding! This Tiramisu Chia Seed Pudding is made with chia seeds, brewed coffee, Greek yogurt, and cocoa powder for a creamy, nutrient-packed treat.

Ingredients

  • tablespoons Honey or Maple Syrup divided
  • ½ cup Chia seeds
  • 1 teaspoon pure vanilla extract divided
  • ¾ cup Coffee
  • ¾ cup Milk of choice
  • ¾ cup Greek yogurt plain
  • ½ tablespoon Cocoa powder for dusting

Instructions

  • In a medium bowl add ¾ cup of milk and ¾ cup of cooled brewed coffee, and ½ teaspoon of vanilla extract.
  • Then add ½ cup of dry chia seeds. Mix well.
  • Stir for 30 seconds then wait 2-3 minutes, then stir again to avoid clumping.
  • Cover and refrigerate for 6 hours or overnight or until thick like pudding.
  • In a separate bowl, add ¾ cup of Greek yogurt.
  • Mix yogurt with ½ teaspoon vanilla extract and 1 ½ tablespoons honey or maple syrup (add more to taste).
  • To assemble: In a jar or cup, layer starting with chia seed pudding; then Greek yogurt mix, then a layer of cocoa powder then continue layering. Dust the top with cocoa powder.
  • Serve chilled and enjoy!

Notes

Use cold brew coffee for a smoother taste.
Let it sit overnight for the best consistency.
Stir twice in the first 10 minutes to prevent chia seeds from clumping.
For extra creaminess, blend the chia pudding before layering.
