Ingredients

  • 9 Medjool dates
  • ½ cup Creamy peanut butter
  • 3 tablespoons Peanuts chopped
  • 1 cup Chocolate chips
  • 3 tablespoons Pistachio chopped
  • 1 tablespoon Ground coconut
  • Dried rose petals, for garnish

Instructions

  • Start by removing the pits from the Medjool dates. Slice them in half lengthwise and set them aside.
  • In a microwave-safe bowl or using a double boiler, melt the chocolate chips until smooth and creamy. Stir occasionally to ensure even melting.
  • On a baking sheet lined with parchment paper or a silicone baking mat, arrange the sliced Medjool dates in an array of 3 rows (3 dates per row).  Dates should be close to each other. Oil hands then press down the dated to flatten.
  • Using a spoon or a pastry brush, spread a thin layer of creamy peanut butter over each date half. This will act as the base for your date bark.
  • Drizzle the melted chocolate over the peanut butter-covered dates, making sure to coat each date evenly. Use a spatula or the back of a spoon to spread the chocolate if needed.
  • While the chocolate is still warm, sprinkle the chopped peanuts, pistachios, and ground coconut evenly over the top. You can also gently press these toppings into the chocolate to ensure they stick.
  • To add a touch of elegance, garnish the Date Bark with dried rose petals. Sprinkle them lightly over the surface.
  • Allow the Date Bark to cool and harden. You can speed up the process by placing it in the refrigerator for about 30 minutes.
  • Once the bark has set, use a sharp knife to cut it into bite-sized pieces or break it into rustic chunks.
  • Serve your Date Bark on a platter or in a decorative tin for a delicious and visually appealing treat.

Notes

  • For a smoother texture when spreading, allow the ingredients to come to room temperature before starting.
  • Ensure an even layer of chocolate and peanut butter by spreading them carefully over the dates. Use the back of a spoon or an offset spatula for a smooth finish.
  • Use parchment paper or a silicone baking mat to line your baking sheet, it makes it easier to remove the Date Bark once it has cooled and hardened, preventing it from sticking.
  • To prevent the dates from sticking to your hands, lightly oil your hands when pressing down on the dates to flatten them.
  • Sprinkle the chopped nuts, ground coconut, and rose petals directly after spreading the chocolate so they adhere better.
