Who doesn’t love a good old-fashioned chicken sandwich recipe? There are many chicken sandwich ideas but this Simple Grilled Chicken Sub Sandwich is easy to make and more than likely all the ingredients are readily available in your freezer, fridge, and pantry!
If you already have chicken breast in your freezer and are looking for a quick simple lunch for the family, this is a great option. Just make sure you thaw your chicken breast the proper way for health and safety wellness.
Quick and Easy Chicken Sub Sandwiches?
Sure it’s a less complicated chicken recipe to make, but there’s a few other reasons to choose this grilled chicken sandwich. First off, this isn’t an ordinary or plain chicken sandwich, it’s a sub. What’s great about subs? Well, you can adapt them pretty much in any way. So, if you have a picky eater at home, or your a picky eater, or you have a house full of picky eaters (lol it’s more common than some like to admit) this is perfect for you. Subs can be tailored to meet the needs of anyone. You don’t like certain toppings, forget about ’em! You love a whole bunch of mayo, go for it!
Other things can be changed up include the marinade, your choice of meat or poultry, and the bun itself! Have fun with this dish and make a create-your-own-sub buffet with your kids! They will love picking and choosing and are more likely to eat something they put together themselves.
What are some variations of chicken subs that can be made?
Below are the different ways you can choose to alter my original recipe. Whether it’s to cater to someone’s food needs (food allergies and such) or to your own taste buds, switch up or swap out whatever you like or dislike from the given recipe.
Type of poultry/meat
- chicken (grilled as in the original recipe, fried, broiled, boiled, rotisserie, etc.)
- deli meats (pastrami, baloney, turkey, etc.)
- red meat (sirloin, rib-eye, brisket, etc.)
- fish (tuna, salmon, shrimp, etc.)
Chicken Marinade
In my recipe, I don’t pre-marinate the chicken. I sauté it first, then add the spices of my choosing to get the burst of flavor we love. You may choose to marinade your chicken in advance and that works just as well. In fact, if you’re actually planning on charcoal grilling, it’s nearly a must! Marinating ensures flavors are trapped in the chicken breast and help in keeping it moist when cooked over high heat. You use the same spices and condiments I used in my chicken marinade or change it up to your liking.
Some condiments or spices you may like to add not in this recipe include:
- Dijon mustard, BBQ sauce, steak sauce, Worcestershire sauce, soy sauce or a gluten-free tamari sauce
- chili powder, taco seasoning, onion powder, or ginger

Ways to prepare homemade grilled chicken
As I previously stated, I sauté my chicken in a pan which is a very easy way to prep grilled chicken. Other ways you could prepare grilled chicken include:
- charcoal grilling (be sure to flip consistently to avoid over charring the chicken) or gas grilling at 350-450 degrees Fahrenheit
- on a griddle
- in the oven on a rack that sits in a pan
What goes well with a chicken sandwich?
Go wild with your toppings! Unless your super picky, which we already fully approved of! You can use the following toppings which I haven’t included in my original recipe:
- red, yellow, or green peppers
- raw or canned mushrooms
- pitted olives
- sliced cabbage or a slaw
- chips of your choice
- salad dressings
Different ways to serve this Simple Grilled Chicken Sub Sandwich
You can serve this yummy meal in so many creative ways. Of course, you can opt for what the recipe calls for, in a bun of your choice. My oh my is there a variety of you to choose from. You can go with a brioche bun, French bread, hoagie buns, old-fashioned burger buns, pretzel buns, and I can go on and on!
Or, you can save on carbs and serve it as a lettuce wrap or lettuce boat! This can even be dished up on a bed of romaine, spinach, or a mix of greens of your choice. Any way you choose to eat it, you’re going to love it!
A few tips on how to make Chicken Sub Sandwiches
- if barbecuing, be sure to brush marinade on chicken as you flip it over while cooking
- if cooking full chicken breast, poke holes in it with a fork to ensure it cooks all the way through and to allow for marinade to seep into the entire cut
- this can also be served like a club sandwich- layered with its toppings between two pieces of toast or in a bagel
- you can swap out ketchup for tomato paste
- if you choose to marinade you can use leftover marinade as a sauce for your sub but be sure to heat it up and ensure it boils for at least 30 seconds to kill any harmful bacteria

How to prepare grilled chicken sub sandwich
- In a large sauce pan, add the oil on medium high heat and sauté cubed chicken for about 6-8 minutes.
- Remove off of heat then add ketchup, mayo, paprika, cumin, garlic powder, garlic cloves, garlic paste, corn, and salt. Mix and adjust taste.
- Remove the insides of your sub bun, then begin to assemble your sub. Add in the chicken mixture and your favorite toppings. Toast in a panini press. Enjoy!
