- ¾ cup Eden Pumpkin Seeds, divided
- 13.5 oz full-fat coconut milk
- 4 garlic cloves
- 3 tbsp tamari
- 2 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tbsp lemon juice (optional)
- 2 tbsp sesame seeds
- 3 green onions, sliced
- ¼ cup fresh parsley
- ½ tsp black pepper
For topping
- ¼ cup additional Eden Pumpkin Seeds
- 1 tbsp sesame seeds
- Extra green onions
- Fresh parsley
Instructions
- Toast the pumpkin seeds: Toast ½ cup pumpkin seeds in a dry skillet over medium heat for 3–5 minutes, stirring often. Set aside.
- Cook the noodles according to the package directions. Drain.
- Make the sauce: Blend ¼ cup pumpkin seeds, coconut milk, garlic, tamari, rice vinegar, olive oil, lemon juice, sesame seeds, parsley, and black pepper until smooth.
