Perfect Anytime: Try the vegan banana blender pancakes for a special breakfast. They are also suitable for brunch. These fluffy pancakes are also wonderful for a late-night meal with your favorite toppings.

Healthy and Filling: Oats in these delicious pancakes are very filling. They contain a high amount of fiber and protein to keep you full and healthy. I always prefer organic oats, which I grab from Whole Foods. They require no oil and no butter. This recipe is a healthy alternative to ordinary pancakes packed with flour and oil.

Kid-Friendly Meal: Your kids will love these pancakes with honey, maple syrup, or fruits. If your kids are bored of sandwiches to school, why not send some pancakes instead? Pour a smaller circle of batter into the skillet. Wait until they cool down, then set them in your kid’s lunch box. You can get creative and pour into fun molds!

Multi-Diet Friendly: If one of your family is lactose intolerant or allergic to dairy products, these dairy-free pancakes are amazing. They are also perfect for a vegan diet, or gluten-free diet.

Ingredient Highlight: Bananas

You might be wondering why I have chosen the banana as a main ingredient for these pancakes. Well, let me tell you why!

The banana has an egg-like texture when mashed. So, it binds the batter together. Bananas are the best substitute for eggs, especially in vegan blender pancakes.

In addition, bananas have a subtle sweet flavor. So, you will enjoy the flavor of banana mixed with honey, maple syrup, or whatever toppings that you add.

What You Need to Make Vegan Banana Blender Pancakes

Bananas: They give natural sweetness and provide a creamy texture. Choose overripe bananas to get sweeter pancakes.

Almond Milk: It’s a perfect dairy-free alternative that adds a subtle nutty flavor. If not available, you can use any plant-based milk, like coconut milk.

Old-Fashioned Oats: Oats are the alternative to flour to make these pancakes gluten-free. They perfectly pair with bananas.

Baking Powder: It is the key ingredient that makes your pancakes fluffy. It makes them rise and be light and airy.

Vanilla Extract: It is an amazing ingredient that gives a warm and deep flavor to banana pancakes. It perfectly pairs with bananas to enhance the sweetness without adding sugar.

Variations of Vegan Banana Blender Pancakes

Chocolate Chips: For chocolate lovers, you can mix some dark chocolate chips into the batter before cooking. You will get pockets of gooey sweetness with every bite!

Berry Pancakes: Mix fresh or frozen berries like strawberries, blueberries, or raspberries into the pancake batter. Berries release their juice to create beautiful pancakes with tangy, sweet flavors.

Peanut Butter Pancakes: Swirl in some peanut butter in the batter. You will get vegan pancakes with rich and nutty flavor. Bananas and peanut butter are an unbeatable pair!

Pumpkin Spice Pancakes: Why not make a fall version of pancakes? Use 1/2 cup of pumpkin puree instead of one banana. It brings more moisture to the pancakes with an extra warm and cozy flavor for the best autumn mornings.

Cinnamon Banana Pancakes: Add 1 teaspoon of cinnamon when blending the batter. You will get an amazing, simple, and flavorful twist.

Nutty Pancakes: For a nutty pancake, toast some almonds or pecans. Grind or chop them finely. Add some to the batter.

How to Serve Vegan Banana Pancakes

The ingredients are very healthy, with a high amount of protein and fiber for satiety. If you want to boost this meal, serve some Satisfying Fruit Salad next to the amazing vegan banana blender pancakes.

Do you want something healthy for a snack at work? Make a batch of small-size pancakes and set them in a container. Chop your favorite fruits and keep them in another container. They are just adorable! Your coworkers will want some.

Do you want to take these pancakes to the next level? I advise you to make some Easy Three Ingredient Caramel Sauce and drizzle it over your plate.

Looking for a little extra sweetness? Top your pancakes with honey or maple syrup! Pair them with a glass of almond milk for the perfect combo. Personally, I always go for honey—it’s like candy to me, and I can’t get enough of it! My kids love it just as much, too.

Do you like an extra nutritious boost? Mix chia seeds and mashed fruits like strawberries. Then, spread them on the pancakes. It is a healthy twist with a bright color pop.

Pro Tip

When you first blend the ingredients, you may have a loose consistency. So, leave it for 5 minutes to rest, you will notice that the mixture will be thicker. If you prefer them a little more dense and fluffy, I recommend you add another 1-2 tablespoons of oats. If you want them thinner, just add around half a cup of dairy-free milk. You will get a slightly looser consistency.

Storage

Making Ahead: Do you know you can make vegan pancakes ahead of time and refrigerate or freeze them to enjoy later? After you make a batch of the vegan banana blender pancakes, set it aside to cool. Then, place them in a container or zip-lock bag.

Refrigerating: After you allow the vegan banana blender pancakes to cool down, stack them with a piece of parchment paper in between, This will prevent them from sticking. Then, place them in an airtight container for up to 4-5 days.

Freezing: Place the pancakes you stored in the airtight container in the freezer for up to 2 months. you can take them out to thaw for about 5-10 minutes. Then, heat them by placing them on a hot skillet on low heat or you can microwave them.

Reheating: I reheat vegan banana pancakes over the stovetop. You can also reheat them in the microwave. If they were frozen, allow them to thaw for 5–15 minutes.

Tips for the Best Vegan Pancakes

Oats First: Blend oats first so you can get fine oat flour. Then, add the rest of the ingredients.

Allow Batter to Rest: Let the pancake batter sit for 5-10 minutes. Then, the oats absorb some of the liquid, and the pancakes will be fluffier.

Test the Pan: Start with a small test pancake to check the heat level and required consistency. Then, the rest will come out perfectly.

Flipping: If you flip the pancake too soon, it will fall apart. If you flip it too often, it will lose the fluffy texture. So, flip each pancake once after the first side is entirely cooked.

Skillet Preparation: You have to be sure that the skillet has completely heated up before pouring the batter. Do not forget to lower the heat so the inside of the pancake gets cooked. You want them to cook properly without burning the outside.

Banana Choice: When choosing the banana for this recipe, pick ripe ones. They will give an extra subtle sweetness to the pancake.

Frequently Asked Questions (FAQs)

How can I know that I should flip the pancake?

After you pour the batter, bubbles will appear and begin to break. When all the pancakes have broken bubbles with a dry top, flip the pancake. You can also lift it slightly to check if the downside has a brownish color.

Is it okay to use the hand mixer to form the batter?

Even if you mashed the banana first, do not use the hand mixer. The vegan pancake will not come out right. You will probably end up with a lumpy batter. So, it is better to use a blender.

How do I know the right consistency for the pancake batter?

After blending the ingredients, the batter should pour easily, but it should not be runny.

Why did my pancakes burn?

Your pancakes may have burned because the heat was too high, the pan wasn’t preheated properly, or there wasn’t enough oil or butter to prevent sticking. Cooking over medium to medium-low heat and using a well-greased pan can help avoid burning.
