    Last weekend was perfect for an impromptu donut-making party with my girls. We had a great time stuffing and glazing these gems.

This recipe may not be the traditional or official way to make Boston cream donuts, but it’s close enough and is absolutely delicious. 

I was inspired by my Boston Cream Buns version, so I just made some tweaks with the filling. This has a more traditional cream filling. The result was amazing!


What are Quick Boston Cream Donuts?

Quick Boston Cream Donuts are soft brioche bread filled with a creamy Boston cream in the centers and topped with a shiny ganache glaze. They are a better option than fried donuts and your belly will be happier eating a lighter donut version!

Another great thing about them is that they require no kneading, rolling, or proofing. Simply poke a hole in the brioche buns, stuff them with custard cream, and dip them in the chocolate ganache! Yummy!

Can I use a different cream filling?

Sure. Feel free to fill these donuts with your favorite cream. You can use whipped cream or my caramel macchiato if you like.

How long do Brioche donuts keep in the fridge?

Store these quick Boston cream donuts in an air tight container in the fridge for 2-3 days.

What is the difference between ganache and glaze?

You can use ganache as a glaze, sauce, filling, frosting, or to make truffles. The difference between all of them is the ratio of chocolate to cream. The glaze usually becomes thick at more temperature. The more thick you want the ganache to be, the more chocolate you should use.

Top Tips

You can prepare the Boston cream a day ahead. If you are making the custard the same day, chill it for some time in the refrigerator so that filling these buns will be easier. The custard filling should be thick, not thin.

If you want eggless custard, you can use cornstarch or custard powder.

Let the cream cool before filling your buns.

Use an ice cream scoop or a piping bag to place the custard in the center of the bun. This will make stuffing them much easier. If you don’t have a piping bag, use a zip lock bag and cut a small slit in the corner of the bag and pipe away.

Quick Boston Cream Donuts Ingredients

  • 6 Brioche Buns
  • Boston Cream Filling
  • Chocolate Ganache Glaze

Boston Cream Filling

  • sugar
  • corn starch
  • teaspoon salt
  • cups milk
  • egg yolks
  • teaspoons vanilla

How to Make Boston Cream Filling

First, whisk together the milk and the egg yolks thoroughly in a bowl.

Next, to a small sauce pan add the sugar, corn starch, and salt.

Pour half of the egg yolk/milk mixture slowly, and mix until the corn starch has dissolved. (Don’t turn the heat on yet.)

Once the corn starch has dissolved turn the heat on to medium high as you pour in the remaining mixture, stirring constantly until it thickens and boils.

Then, stir one minute and remove from heat the stir in the vanilla extract. 

Allow to cool for about 10 minutes, covered with kitchen towel

After that, quickly warm the buns in the oven at 200F for 5 minutes

If using closed buns, using a knife or kitchen scissors, gently poke a hole in the side of the donut to create a pocket inside

Scoop into a zip lock bag for piping into the brioche buns.

Finally, scoop out chocolate ganache and glaze the top of the buns. Enjoy fresh, or later on.

Ingredients

  • milk chocolate chips
  • cup heavy cream
  • vanilla extract

How to make the Chocolate Ganache Glaze

In a small sauce pan, bring heavy cream to a boil then remove from heat

Add 1 cup chocolate chips and vanilla extract. Stir until smooth creamy chocolate ganache has formed.
