Prepared with buttery stringy Filo Dough, filled with a delicious homemade ashta sweet cream baked to perfections!

So, some of you may be wondering what 3osmaliyi is. It’s filo dough that’s cooked to a golden color and layered with Ashta. No need to explain Ashta for regulars on my blog, but if you’re not familiar just press on the word and follow the link. Save the recipe! You won’t regret it!

What is Filo Dough?

Fillo dough is usually the dough used in making things like baklava. The dough used for 3osmaliyi can also be called filo dough or osmaliyi dough. The important difference is that the dough for this recipe is stringy and light as can been seen in the picture below. The great thing about this dough is that it cooks quickly, becomes a dreamy golden color, and is super crunchy! Also, you can use this dough in other desserts! Furthermore, you can use as a substitution for other doughs when you need a crunchy base.

One of the best Lebanese Desserts

Making this is super simple although it looks intimidating but it really is one of the easiest Lebanese custard desserts you can make! The roasted vermicelli with ashta cream is beyond decadent and every bite is a dream!

Osmaliyi is a loved Lebanese dessert that is also known as outhmallieh, osmalieh, vermicelli dessert, vermicelli cake, Lebanese custard cake and mshabak. There are many Lebanese sweets recipes or Lebanese dessert recipes that are over the top and this by far is one of them!

Other custard filling desserts that are loved and similar are Kunafa, ashtalieh that include that delicious ashta cream.


Ingredients

  • 1 package Kataifi Fillo Dough
  • 1 stick unsalted butter melted
  • 32 oz. Ashta
  • simple syrup
  • ground pistachio for garnish

How to Make Ashta Cream

Ashta is a delightful aromatic sweet cream used in many middle-eastern desserts! I have a simple 5 ingredient ashta blog recipe for you. Get the sweet cream ashta recipe here.

You will need:

  • Ricotta cheese
  • milk or heavy cream
  • rose water
  • corn starch
  • sugar

How To Prep Osmaliyi Dessert

  1. In a pot add in the cold milk and corn starch and whisk until starch dissolves.  Now, turn heat on high then add in the sugar and blossom water…whisk until it boils and milk has formed into a creamy consistency. Turn heat off and remove pot off stove. Add in the 32oz of ricotta and whisk until all combined and ashta has formed.  Allow to cool for 15 minutes covered.  Use right away or refrigerate for a firmer ashta. Enjoy!
  2. Preheat oven to 350 F Grease round 10 x 2 inch pan with butter or cooking spray. 
  3. Melt 1 stick of butter. Separate and pull apart the Filo dough until it is all loose and apart. Then massage all throughout the pulled apart Fillo.
  4. Take half the amount of Filo and press down into the pan and upward around the edges.
  5. Next layer the ashta cream all around, then add the other half of the Fillo Dough to cover all the ashta.
  6. Bake for 40-45 minutes or until golden brown.  You can broil for 2 minutes if it is not browning.  Flip onto a round pan and drizzle simple syrup.

Prep Time: 15 minutes
Cook Time: 45 minutes
Servings: 13 servings

Ingredients 

  • 1 package Kataifi Fillo Dough

  • simple syrup
  • ground pistachio , for garnish

Simple Syrup

  • 2 cups white sugar
  • 1 cup water
  • 1 tablespoon blossom water
  • 2 tablesooons lemon juice

Instructions 

  • Preheat oven to 350 F Grease round 10 x 2 inch pan with butter or cooking spray. 
  • Melt 1 stick of butter. Separate and pull apart the Filo dough until it is all loose and apart. Then massage all throughout the pulled apart Filo.

Simple Syrup

  • Bring to boil 2 cups of sugar, 1 cup of water, 1 tbs blossom water and a squeeze of lemon to a boil.  Simmer for 15 minutes until syrup has thickened. Once it cools it will become slightly thicker.
