    Frequently Asked Questions

    Can I freeze Ashta?

It is not recommended to freeze clotted cream or ashta. Once it defrosts, it will lose its creamy texture. It may become dry and crumbly. So, it is better to store it in a container in the fridge for 2-3 days.

What is the difference between whole milk and heavy cream?

Whipping cream is much fattier than whole milk. But, they work the same way in most recipes just like Ashta recipe. If you use whole milk, you can some butter to add the fats.

After it chilled down, my Ashta has become too thick. What can I do to spread it easily?

A good idea is to get a hand blender. Whisk it few times. It will get back to its smooth creamy texture.

    Can I fry ashta?

It is a great way to try other versions of ashta tastes. Of course, you can fry them after forming them into Middle-Eastern Pancakes (Atayif). You can also set them in the oven like Osmaliyi Dessert With Ashta.

Thank you! It lasts about 3 days in the fridge in an air tight sealed container. I would suggest to add paper towel to the lid so that it can absorb any moisture.

I’ve tried many sweet Ashta recipes before, but this one worked best. Being a fan of Lebanese desserts, I’m gonna use this Clotted Cream (Sweet)- Ashta recipe often. I just have a question. Is there an alternative of ricotta cheese??

This is one popular recipe on this blog! I would stick to ricotta cheese 🙂 NO need to swap it out unless you are trying to go for dairy free – you can try dairy free ricotta cheese and give it a shot!

Hi there! I’ve just discovered your blog.. I’m Lebanese living in Australia and doing keto! You mentioned we can use heavy cream, sweetener and arrowroot powder (instead of cornstarch) – do you think I could use xantham gum to thicken the ashta instead of the arrowroot?

Thanks so much, I can’t wait to try.

Hi Kat! So nice to meet you! I am also Lebanese 🙂 You can definitely swap cornstarch for the ‘same amount’ of xantham gum as a thickener. Let me know how it turns out for you!
