This healthy bowl can be topped with a variety of options like green onions, red onion, sunflower seeds, kidney beans, chickpeas, red cabbage, roasted russet potatoes, roasted beets, brussels sprout, fresh cilantro, or even lime wedge!

In a food processor or blender, combine ripe avocados, plain Greek yogurt, red wine vinegar, lime juice, fresh parsley, honey, Cajun seasoning, and heavy cream.

Blend until smooth, drizzle all over your rice bowl, and enjoy!

There is never a good reason to throw away any meal’s leftovers! If you are anything like me, then you would surely appreciate a hidden savior to fight any sudden hunger that might hit you during the day!

To store: This meal holds for about 4-5 days if stored properly in an airtight container in the fridge. However, you might want to check the avocado slices if they are still in eatable condition.

Meal Prep: This recipe makes a great meal prep option! Simply follow the instructions mentioned below, place them in an airtight container, then add the tahini dressing and avocado when ready to consume. Easy!

Tip 1: Chop the sweet potatoes in chunks of the same size (no longer than half an inch), and place them as a single layer on the baking sheet. Chopped potato cubes will guarantee even cooking.

  • mixed bell pepper, diced
  • corn, drained
  • hass avocado, sliced or cubed
  • cooked rice
  • salt and pepper, to taste

Tahini Dressing

  • tahini paste
  • plain yogurt
  • lemon juice
  • garlic clove, minced
  • salt to taste

Follow The Instructions

First, preheat oven to 400°F. 

Second, place parchment paper on a baking sheet, and spray with cooking spray. Place the peeled and cubed sweet potatoes, onions, and peppers on the baking sheet; then place in the preheated oven for 15-18 minutes. ⁣⁣

Meanwhile, cook rice according to instructions, then place in serving bowl. 

Next, begin assembling the bowl by adding the baked potatoes, onions, peppers, mixed greens, corn, and sliced avocado. 

Then, make the tahini dressing by mixing all the ingredients together in a small bowl.

Finally, top your bowl with tahini sauce then garnish with cilantro and a sprinkle of Cajun seasoning.
