    For this recipe, I added xylitol sugar for us, which is sugar free although there is nothing low sugar about this recipe, right? lol.

    I like to balance it out since it makes me feel better and save a little on the sugar. It is an option if you are like me, but of course you can use white sugar or cane sugar.

    If you want to reduce the sugar content, split the regular marshmallow in half or use mini marshmallows.

    Better keep the dough high: once rolled and placed on on the baking tray, don’t press hard on the dough balls or they won’t stay fluffy and thick enough.

    Don’t forget to let the butter soften first so that you will have a perfectly smooth dough for your cookies.

    Using a cookie scoop will help you get evenly sized cookies for baking. Also, this way allows the dough to hold in the chocolate chips and marshmallows.

    Always add a few more of chocolate chips to the top of the formed cookies before baking. This ensures your cookies to look super pretty and gives extra softness right on top.

    • brown sugar or coconut brown sugar
    • cane sugar or xylitol
    • egg
    • vanilla extract
    • all purpose flour

    • chocolate chips
    • marshmallows

    How To Prepare Gooey Marshmallow Chocolate Cookies

    First, preheat oven to 350°F. Bring a large bowl or stand mixer in which you will beat the softened butter, brown sugar, and cane sugar. Once combined add in the egg, vanilla, and mix.

    Second, very slowly add in the flour until mixed well. Then add in the baking powder, fold in well using a spatula. Next, add in the chocolate e chips and fold in once again.

    After that, scoop out the cookie down using an ice cream scooper. Using your thumb, form a hole in the center and place a whole marshmallow inside. Then press it down and cover using your fingers.

    Finally, place cookies on a prepared baking sheet making sure they are about 2 inches apart.

    Now all you have to do is to bake the cookies for 11-13 minutes.

    Once they’re done, you can enjoy these cookies right away like we did! No refrigeration is needed, unless you choose to!
