Stews are usually most popular in colder seasons. Especially since in winter our bodies crave warmth and a fuller feeling achieves this. Lemon Mint Garlic Chicken Stew is totally satisfying, especially with its thicker stew.
But, this particular stew is great year round. Sure it has that warm hearty feel to it, but it’s ingredients feel just as great in warmer days. The tanginess of the juice in the stew and the coolness of the mint give it a summery vibe!
Why I Love This Stew
There are plenty of reasons why I enjoy this stew. First of all, I love dishing out what my family loves. This is one of my husband’s favorite stews and I learned it from my mother-in-law.
I tweaked it up here and there a bit to fit our preferences, and my husband loves it just the same.
It’s also a favorite for my kids and it excites me to see them eating healthy and hearty. Anything that brings my family happiness, makes me happy.
Another reason I love making this stew is because it’s one of those one-pot meals that doesn’t require a dish load of equipment to make.
Lemon Chicken With Mint
It’s also very easy to make even though it looks like a lot goes into it. It’s really just all about the preparation.
If you prepare in an organized fashion, you’ll find yourself enjoying your stew in no time! So any stew that can be cooked and plated in an hour or less is an A+ in my meal plan!
Finally, the combination of ingredients is the perfect balance between refreshing, hearty, and zesty. Chicken and potatoes are always an amazing couple together!
Serving the Stew
Since the stew is made in one pot, you can serve it directly from the pot. But, we all know it’s so much better when you serve it plated up nicely. There are a few great side dishes you can serve this on or with, including:
- A bed of white rice with vermicelli
- Next to Basmati or Jasmine rice
- Over your favorite pasta
- With a crispy green Mediterranean salad
- Any salad of your choice
Tips for a Delicious Lemon Mint Garlic Chicken Stew
- You can use any part of the chicken you’re in the mood for. It works great with chicken still on the bone because it gives the broth a little more flavor and thickness.
- But, you can opt to use boneless chicken breast or thigh and tweak flavors to your liking.
- If you want to kick up flavors a notch or two, you can add fresh mint right over your plate. You could also roast your garlic ahead of time and add it to the stew for more flavor.
- Don’t have enough lemons or want it extra tangy? You can add half a teaspoon of citric acid!
Ingredients for Lemon Mint Garlic Chicken Stew
- chicken breast, thighs, or drumsticks
- avocado oil
- potatoes some cubed in large pieces and some small
- water
- garlic
- dried mint
- lemons; juiced
- salt and black pepper
How to Make the Stew
- In a small bowl mix together the mint, lemon, and minced garlic. Set aside.
- In a large pot add the ¾ cup oil, add largely cubed potatoes and sauté them on medium-high until golden brown. Remove them and set aside.
- In the same pot with the remaining oil in it, add your chicken of choice, season on each side with salt and black pepper. Sear on medium high heat for about 4 minutes on each side.
- Add 12 cups of water to the pot of seared chicken, add the 2 small cubed potatoes. Pour in half of the lemon and mint mix we have set aside. Bring pot to a boil then on on low heat for 35-40 minutes. Mash down the small potatoes to thicken up the broth.
- Add in the largely cubed potatoes and the remaining mixture of mint, lemon, and garlic. Add salt and pepper to taste. Enjoy with a side of white rice!

Ingredients

This soup was so good and versatile. Great for warm and cold weather. Comforting and hearty with rice for winter time but the fresh taste of mint and lemon also makes it great for summer time.
