Lemon Mint Garlic Chicken Stew is a tangy, aromatic one-pot meal full of flavors that will tickle your taste buds. It’s sure to be a big hit with the whole family! Once you’ve tried it, it’ll be on your monthly menu rotation.

Stews are usually most popular in the colder seasons, especially in winter, because our bodies crave warmth, and lemon mint garlic chicken stew is completely satisfying, especially with its thicker stew.

But this particular stew is great year-round. Sure, it has that hearty, warm feel to it, but its ingredients feel just as great on warmer days. The tanginess of the lemon juice in the stew and the coolness of the mint give it a summery vibe!

Why I Love This Chicken Stew

There are plenty of reasons why I enjoy this stew. First of all, I love dishing out what my family loves. This is one of my husband’s favorite stews, and I learned it from my mother-in-law.

I tweaked it here and there a bit to fit our preferences, and my husband loves it just the same.

It’s also a favorite for my kids, and it excites me to see them eating healthily and heartily. Anything that brings my family happy makes me happy.

Another reason I love making this stew is that it’s one of those one-pot meals that doesn’t require a dish load of equipment to make.

It’s also very easy to make, even though it looks like a lot goes into it. It’s really just all about the preparation.

If you prepare in an organized fashion, you’ll find yourself enjoying your stew in no time! So any stew that can be cooked and plated in an hour or less is an A+ in my meal plan!

Finally, the combination of ingredients is the perfect balance between refreshing, hearty, and zesty. Chicken and potatoes are always an amazing couple together!

Serving the Stew

Since the stew is made in one pot, you can serve it directly from the pot. But we all know it’s so much better when you serve it plated up nicely. There are a few great side dishes you can serve this with, including:

  • A bed of white rice with vermicelli
  • Next to Basmati or Jasmine rice
  • Over your favorite pasta
  • With a crispy green Mediterranean salad
  • Any salad of your choice

Tips for a Delicious Lemon Mint Garlic Chicken Stew

You can use any part of the chicken you’re in the mood for. It works great with chicken still on the bone because it gives the broth a little more flavor and thickness.

But you can opt to use boneless chicken breast or thigh and tweak flavors to your liking.

If you want to kick up the flavors a notch or two, you can add fresh mint right over your plate. You could also roast your garlic ahead of time and add it to the stew for more flavor.

Don’t have enough lemons or want it extra tangy? You can add half a teaspoon of citric acid!

Frequently Asked Questions (FAQs):

Why is stew better than soup?

Stew is heartier and thicker than soup. The ingredients are also chunkier, and while the dish contains liquid, it is only enough to cover the main ingredients.

Should I stir a stew?

Stir the stew gently and infrequently to avoid breaking up the vegetables.

Why do I put lemon juice on chicken?

Lemon juice not only adds flavor and acidity to the dish, but it also helps tenderize the chicken.
