Cilantro Chicken Egg Rolls are made with seasoned cubed chicken that is sautéed to perfection. Then the filling is rolled up in wraps- or egg rolls- and deep-fried, air-fried, or baked until crispy and golden.
Finally, you can dip them into a savory and sweet Almond Cilantro Sauce! An unforgettable eating experience!
I stood in the kitchen last night and had no idea what I wanted to make with the chicken I had planned to use. I was in a bit of a hurry to get some food out onto the dinner table when I got this great idea! Tex Mex inspired, this Cilantro Chicken Egg Rolls recipe was born!
The Aim of this Recipe
So, why did I decide on using my chicken to make this particular recipe? Well, for starters:
If you’re making a small batch, it can be whipped up real quick!
You can make it with minimal ingredients, probably already on hand at home.
Requires less running around than most dishes. You can literally roll them up while sitting down!
You can cook them as you prefer: air fry, deep fry, or bake.
Easy to get creative with because chicken marries so well with a variety of ingredients to create a yummy filling.
Perfect for game nights, an appetizer for potlucks or dinner parties, a great pre-dinner snack for kids when hunger hits, and a great side dish to any main meal!
The Filling for Cilantro Chicken Egg Rolls
For my recipe, I used simple ingredients available in my kitchen. Cubed chicken breast sautéed with some of my favorite seasonings and corn. May seem plain, but it’s actually bursting with aromatic flavors!
What Else Can I Add to this Filling?
- A variety of veggies that you or your family enjoy including: red, green, or yellow peppers, shredded carrots, diced onions, cabbage and whatever else your heart desires.
- You can swap out chicken for turkey breast or seafood of choice. Or, another form of protein like beans!
- Smashed or diced avocados marry well with cilantro and chicken and would be a great addition to this filling.
- CHEESE! You can add any cheese you prefer from mozzarella to cheddar to edamame to a mix of your favs!
How do I Fold Egg Rolls?
First: Turn the wrap to make a diamond shape with a corner pointing towards you.
Second: Add the filling in the center of the wrap horizontally.
Third: Dip your finger into some water and rub all the edges just enough so that they are damp.
Fourth: Fold two opposing sides toward the center.
Fifth: Fold the side closest to you over, and press gently, but firmly on the filling so it stays in place tightly as you roll.
Sixth: Roll the wrap up and tuck in any loose edges or sides so that none of the filling can be seen or is flowing out.
Tips for Making Great Cilantro Chicken Egg Rolls
- You can use shredded rotisserie chicken if you have it on hand or if you prefer rather than cubed chicken breast.
- If deep frying the egg rolls, it’s best to brush them over with an egg wash mixture- eggs and water. This prevents them from absorbing too much oil and helps them become and remain crispy!
- It’s best to use flavor-neutral oil that has a high smoke point when deep frying or as a spray. This includes canola oil, peanut oil, or corn oil.
- You can deep fry in a pan that isn’t so deep. This way you save oil, and they crisp up faster. Simply cook them about 2 minutes on each side or until golden brown using about an inch or so of oil.
- If air-frying or baking, no need to brush with egg wash, simply spray them lightly with oil spray of your choice.
- When baking, preheat oven at 4250 F and cook for about 20 minutes or until golden and crisp. Turn them over about 8 to 10 minutes in.
- For air frying, temperature should be 4000 F and cook for about 6 to 8 minutes or until desired color and crisp are achieved. Turn over at around 3 to 4 minutes.

- chicken breast diced small
- egg rolls thawed
- olive oil
- salt to taste
- chili powder
- garlic powder
- onion powder
- cumin powder
- can of corn drained
Almond Cilantro Sauce
- white vinegar
- raw almonds
- olive oil
- cilantro
- salt
- honey
- cumin
How to Make the Egg Rolls

- Cut the chicken breast into cubes, add seasonings, and sauté. Add corn right before you turn off the heat.
- Thaw out the egg rolls ahead of time. You can spread them out a few at a time to make the folding process a little quicker.
- Add the chicken filling into each wrap and roll them up.
- Air Fry at 400 F for 6 to 8 minutes until golden and crispy. Dip in the sauce and enjoy!

Air Fried Cilantro Chicken Egg Rolls
Ingredients
- 2 lbs chicken breast, diced small
- 12-14 egg rolls, thawed
- 3 tablespoons olive oil
- salt , to taste
- ½ teaspoon chili powder
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- ½ tablespoon cumin powder
- 1 12 oz can corn, drained

Almond Cilantro Sauce
- Put all the ingredients into a blender and mix. Or put into a bowl and mix with a hand blender. Enjoy!
Almond Cilantro Sauce
- Add ingredient together in a small food processor or use an immersion hand blender. Pulse until it is combined. You can choose to combine until smooth or in small pieces like I did.
