  • 2 pounds Chicken breast , diced small
  • ¼ cup Mayonnaise
  • 3 tablespoons Ketchup
  • 3 tablespoons White vinegar
  • 4 tablespoons Olive oil, divided
  • tablespoon Cumin
  • 1 tablespoon Paprika
  • 1 tablespoon Garlic powder
  • ½ Bunch parsley, finely chopped
  • 2 teaspoon Salt
  • 6 Hoagie rolls, or Sub rolls

Aoili Garlic Sauce

  • ½ cup Mayonnaise
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 2 Garlic cloves, minced

  • In a medium skillet on medium heat, sear the cubed chicken with olive oil, stirring continuously for about eight minutes or until the chicken has cooked.
  • Once the chicken is cooked, turn off the heat and drain out any excess water. Keep the chicken in the skillet.
  • In a mixing bowl, combine mayonnaise with the remaining 2 tablespoons of olive oil, white vinegar, ketchup, cumin, garlic powder, paprika, salt, and chopped parsley.
  • Assemble the sub bread with a spread of aioli sauce, chicken, lettuce, tomatoes, and pickles. Toast your sub and enjoy warm!
