Sweet Potatoes

Sweet potatoes are a starchy root vegetable that have a sweet taste. Found all across the globe, they come in different colors including white, orange, purple, and yellow. Furthermore, they also range in sizes and are packed with nutrients. They have a lot of benefits including:

Preparing Sweet Potatoes

Pick up your favorite sweet potatoes at your local grocery store. The fresher the better of course, and small to medium in size. Soak them a bit, wash well, and dry them up.

It’s important to dry them well because skin gets crispier when baking so it’s easier to separate them from the potato.

Cut them up into cubes and place in an oven-safe baking dish, pan, or best choice which is a baking sheet. You can line the pan or sheet with foil or parchment paper. Bake for a about an hour or until desired softness.

What can I substitute for walnuts?

You can use pecans instead of walnuts.

What’s the difference between walnuts and pecans?

Smaller and sweeter than walnuts, pecans have more fiber, monounsaturated fat, and vitamin E. Larger and more textured, walnuts have more protein content, most micronutrients, and polyunsaturated content.

If I want a more caramelized or candied texture on my casserole, what should I do?

You can substitute white sugar with brown sugar. You can also broil the casserole a little extra to get that extra caramelized taste and texture.

How can Sweet Potato Walnut Bake be stored?

Fridge

They can be refrigerated for up to three days. You can store as is in the pan you cooked them in. Or, you can cut them into individual bars, wrap them up, and store them!

Freezer

Furthermore, you can take it one step further if you’d like to individually wrap by freezing them. Either wrap them in cling wrap or drop individual pieces into zip lock bags and throw into the freezer. You store in a freezer-safe container and separate the individual slices or pieces with baking or parchment paper. They freeze for up to 3 months!

Defrosting

Remove from the freezer the night before and place in fridge. It should thaw overnight. You can also warm it up in the microwave for around a minute or until warm enough to your liking.


Tips for the Perfect Simply Sweet Potato Casserole with Walnuts

  • It’s important to stick to the portions and amounts in the recipe to keep flavors balanced.
  • Be careful not to use too much rose or blossom water so that they don’t overpower the other flavors.
  • It’s important to bake for near 50 minutes and broil anywhere between 1 to 10 minutes while you watch it carefully. It’s important to stay near the oven while broiling because this casserole can easily overcook on the top.
  • The more you broil, the more caramelized and crispy the top layer gets, just be careful not to burn it!
  • You can use white sugar, brown sugar for a more candied or caramelized taste and texture, or you can use a sugar substitute like I do. I use Xylitol which works just as well in terms of texture and taste!
  • You can also forgo sugar altogether and use date paste and mix it into the sweet potato mix. It’s great to help hold the mix together better and adds the perfect amount of sweetness.
  • Drizzle the simply syrup as soon as you remove the casserole from the oven while it’s still sizzling hot.
  • You can swap out the syrup and drizzle honey instead! Don’t like syrup or honey? Try drizzling peanut butter, Biscoff, or your favorite jam or jelly on top!

Ingredients for Simply Sweet Potato Casserole with Walnuts

Sweet Potato Casserole

  • sweet potatoes
  • semolina
  • ghee
  • blossom water
  • rose water
  • sugar or Xylitol
  • salt
  • baking powder
  • baking soda

Filling

  • walnuts
  • sugar
  • rose water

Before Serving

  • simple syrup

How to Prepare Sweet Potato Walnut Casserole

  1. Bake the sweet potatoes at 450 for 1 hour.  Allow to cool the peel the skin off. 
  2. Place the peeled sweet potatoes in a medium size bowl and mash.  Then, add the semolina and mix well. Add in the ghee butter, sugar, baking powder, baking soda, salt, rosewater, and blossom water.
  3. Meanwhile, crush 3 cups of walnuts in a ziplocked bag then place in a small bowl. To the walnuts, add 2 tablespoons of sugar and rosewater, then mix. 
  4. In a medium-sized baking dish, 2-3 inches deep spray generously with cooking oil spray. Preheat oven to 350 F.
  5. Place half the sweet potato mixture on the bottom of the baking dish.  Spread the layer carefully until smooth. 
  6. Now, top the sweet potato layer with the walnut mixture and spread evenly.
  7. Form the top layer in patches and smooth out until it is totally covered.  Dip your hand in water and smooth out the whole surface. 
  8. Bake for half an hour then remove.  Using a knife gently cut into the sweet potato casserole to form diamond or square-shaped pieces. The knife doesn’t need to go deep in when cutting, as long as you have a pattern formed.
  9. Place back into the oven for another 20 to 25 minutes.  Broil for 2-3 minutes until golden brown. Watch it carefully as it broils.
  10. Remove and drizzle simple syrup all over.  Allow to cool for 20 minutes before enjoying!
