It brings back memories! The fragrance of Date Stuffed Brioche Bread reminds me of those old school days when we enjoyed a fulfilling sweet brioche during the break. It is one of my mom’s heavenly recipes.

Date Stuffed Brioche Bread has a perfect brown glaze covered with crunchy sesame. It perfectly pairs with the sweetness of dates and the fluffy texture of brioche.


Brioche bread is appealing on its own. Prepare the flour, milk, yeast, sugar, eggs, mahlab, and ghee to make the dough. Add the delicious date paste and top it with toasted sesame. Enjoy the perk of brioche stuffed with date paste.

During my trip to Michigan, my mom made this divine Date Stuffed Brioche Bread. My kids and I could not get enough of it. I had to stop myself of course. Not everyone can master bread recipes because let’s face it, not everyone can make a bomb dough.

I just love that swirly look of the bread; it calls out loudly: EAT ME!! When I make a batch, my kids love to have one or two in their lunch boxes. It is also perfect to set in a zip lock or a container and take it to work. You can enjoy it with a cup of coffee or tea during the break.


Filling Variations for Special Date Stuffed Brioche Bread

Though plain brioche is light and delicious, stuffing it adds extra flavor and sweetness. You can make several stuffing for the same batch. So, you will end up with brioche that pleases your family and friends.


Date Paste

Dates are a natural sweetener in various dishes! You can use dates in many recipes like Date Nut Bars, Date Cakes, or Almond Stuffed Dates. It is a great way to give my kids something nourishing and very tasty!

You can buy ready made date paste. Surprisingly, it is so easy to make it at home. Pit some dates and set them in the food processor to get a smooth soft texture.

If you want to add more flavors to the Date Stuffed Brioche Bread, you can sprinkle some cardamom powder. It is also possible to add some cinnamon powder. How about a sprinkle of both? You decide! Add some butter and knead it to the date paste until smooth.


Date Paste with Pistachio or Walnuts

Do you like nuts? Well, pistachio is a great option. So, you can add some to the date paste. You can also add some walnuts.

Tips For Perfecting Date Stuffed Brioche Bread

Tip 1: It’s essential to mix warm water, warm milk, yeast, sugar and let them rest for 10 minutes so yeast foams. Make sure milk and water are not too hot. Otherwise, the yeast won’t be properly activated.

Tip 2: Making dough depends on the temperature of your home and the flour you’re using. If the dough seems too loose, you can slowly add in flour and knead until you get the correct texture.


Tip 4: It is recommended to use a stand-mixer with the kneading utensil to ensure the dough is kneaded thoroughly and ingredients are well combined.

Tip 5: Let the dough rest at least an hour to rise. Brioche will have a fluffy texture once baked.

Tip 6: The glaze is necessary for that final glossy look. It also helps to get that golden color once broiled.

Tip 7: Try to use the same measuring cup when you prepare the ingredients.

Why did the brioche bottom and the top was still not golden?

It means that the heat in your oven is high. Try to lower it. If the top does not get golden but the dough is well baked, you can broil the brioche for 2 minutes.

Why is my brioche bread so dense?

It seems that the dough was too dry. You could add some warm milk to the dough to get the fluffy light texture.

How can I store extra brioche?

You can leave brioche well covered at room temperature for up to two days. They can stay longer in the fridge. You can store them in the freezer for up to 6 weeks. Upon serving, you can let them thaw at room temperature. If you like them warm, reheat them in the oven or the microwave.

Ingredients for the Date Stuffed Brioche Bread

  • All-purpose white flour
  • Warm milk
  • Yeast
  • Sugar
  • Sugar
  • Egg white
  • Whole egg
  • Mahlab ; optional
  • White vinegar
  • Ghee
  • Salt

For the Stuffing

  • Date paste

For the Glaze and Topping

  • Honey
  • Warm water
  • Toasted sesame seeds

Steps to Prep


Prepare the Dough

To prepare the dough

  • In a bowl mix 1 cup of warm milk, yeast, sugar. Set aside for 10 minutes so the yeast activates.
  • After 10 minutes add the flour, mahlab, white vinegar, egg whites, melted ghee, salt, and the remaining one cup of warm milk to the bowl. Knead well until soft and dough has formed. Cover directly with oiled suran wrap and then a kitchen towel and allow to rest for 1 hour.
  • Flip the dough onto a clean kitchen counter. Knead the dough again and fold from each end. Then, fold it again from opposite ends. Knead again and fold. Do this process about 3-4 times.

Prepare the Brioche

Begin to form 4 inch size balls of dough. Place on a prepared baking sheet with parchment paper and lightly spray it with cooking oil.

Once all balls have formed, spread each ball of dough length wise using a rolling pin. Make it about 12 inches long and 1 inch wide. 

Dip your fingers in olive oil, then roll date paste length-wise and place it in the center of the dough length-wise. 

Close the dough all around lengthwise. Then, grab from one end and roll it in all the way until a full round circular brioche nest has formed.


Final Touch

  • For the glaze you’re going tp mix the honey and warm water in a wide shallow bowl. Fully brush the top of the brioche.
  • Then, sprinkle toasted sesame seeds on top or for an easier way you can add the sesame seeds onto a place and dip the glazed brioche in the sesame seeds.
  • Place on a prepared baking sheet and leave the brioche to rest for about 20 minutes. 
  • Bake at 400°F for about 20 minutes or until golden brown. Broil for 2-3 minutes if needed.
