I kind of feel like every sip echoes with festive childhood memory.

But the adult plant-based twist makes this drink ten times better than Starbuck’s pumpkin spice latte. Say goodbye to that morning trip to the nearest coffee shop!

Note that our PSL recipe is made with dairy-free ingredients and doesn’t include any heavy cream, making it low in overall fat content. A great option for a guilt-free drink packed with all the right kinds of sweet flavors.

The process is quite literally super simple. Here’s how it goes.

Start by blending the mixture of pumpkin pie spice, pumpkin puree, espresso (or your choice of coffee), sugar, and milk of choice in a blender or on stovetop.

Fill a large glass with ice cubes, then pour the latte into the glass. Enjoy!

*Sigh* In a better world, pumpkin-flavored drinks would be year-round thing. Wait… can we actually make that happen? Please?

Tip 1: Make this recipe kid-friendly by eliminating the coffee all together.

Tip 2: If you are short on pumpkin spice, gingerbread spice makes a good substitute. However, I don’t think your drink will be very pumpkin-y anymore.

Tip 3: Consider enhancing the warming natural flavors by adding other spices like nutmeg ginger and cloves. For best results, add a pinch of vanilla extract.

Can a pumpkin spice late be decaf?

Sure! For a decaf pumpkin spice late, replace your regular coffee pod with decaf Nespresso pods.

Can I use real pumpkin?

If you are feeling a strong pumpkin flavor, then add in a couple of tablespoons of canned or homemade real pumpkin puree (butternut squash is a good option too). Refrain from using pumpkin pie filling.

Is this a vegan pumpkin spice latte?

Since this recipe calls for non-dairy milk like Oat milk (plant milk), it is considered vegan-friendly. However, make sure you use vegan and dairy-free whipped cream as a topping.

The List of Simple Ingredients

Nespresso coffee pod, or coffee of choice: You can use a shot of espresso, or any strongly brewed coffee.

Oat milk: Any plant-based milk of choice like cashew milk, soy milk, or creamy almond milk works as well. Look for the “barista blend” version of your favorite brand; it has a thick yet silky texture. You can always substitute this with regular whole milk too.

Sugar of choice: Although I use sugar, some might consider using maple syrup, date syrup, agave nectar, or even brown sugar. Adjust the sweetness to your liking.

Pumpkin spice: Buy pumpkin spice from your local grocery store, or make your own pumpkin spice blend by mixing together cinnamon, nutmeg, ginger, and all spice.

Toppings: I found adding dairy whipped cream, coconut milk, and cinnamon a literal cheery on top! You can also add Cacao nibs for a dash of some chocolate-y flavor, pumpkin spice syrup, coconut whipped cream, or pumpkin spice sauce.


Follow The Instructions

First, in your favorite cup, brew the coffee. I made Nespresso.

Meanwhile, froth 1/4 cup of oat milk with 1/2 teaspoon sugar (add more for more sweetness) and 1/2 teaspoon of pumpkin spice.

Next, pour the frothed oat milk into the warm coffee cup. Give it a little mix so the spices mix in with the coffee.

Finally, top with coconut whipped cream and garnish with cinnamon by adding a bit of cinnamon into a small strainer. Hold it over the whipped cream, and tap the strainer so that it sprinkles over the whipped cream.


Mix and Allow The Flavors to Blend In!

Don’t be alarmed! This is what you will get when you add the oat milk that is froth with sugar and pumpkin spice. Mix, then enjoy!

Ingredients 

  • 1 (8 oz) Nespresso coffee pod, coffee of choice
  • ¼ cup oat milk
  • ½ teaspoon sugar of choice
  • ½ teaspoon pumpkin pie spice

  • coconut milk
  • cinnamon
