    What is a pita salad wrap?

    Pita bread is a round flatbread leavened with yeast made with wheat flour. It has popular variations across the Mediterranean and Middle Eastern countries.

    A pita wrap is when you fill the pita with your favorite ingredients and roll it up to eat it. Pita wraps can be filled with chicken or meat, like the ever-so-famous shawarma wraps, or other vegetarian choices.

    A pita salad wrap is exactly as it’s named! It’s a pita wrap stuffed with a salad. This type of wrap was originally made popular by Greek Salad wraps, usually made on Naan bread. Naan is a bit similar to pita but is a little more tender and moist than pita which is a more dry bread. Also, it’s important to note they vary greatly in nutritional value.

    Pita bread is perfect for wrapping because it holds the salad or any other ingredients inside it quite well. It’s also a common practice to warm the bread over an open fire (over the heat of the stove burner) for 3-5 seconds on each side before wrapping. This makes the pita soft for a minute so you can add your ingredients and wrap it. Then, as it cools it becomes crisp and crunchy!

    Ingredients

    Salad

    • chickpeas
    • cucumbers 
    • feta cheese
    • red onion finely
    • Artisan lettuce
    • Kumato tomatoes 
    • Libby’s Vegetables Whole Kernel Sweet Corn

    Salad Dressing

    • olive oil
    • lemon
    • red wine vinaigrette
    • sour cream or Greek yogurt
    • dried mint
    • garlic powder
    • Salt and pepper

    Steps for Prep

    1. Assemble the salad in a bowl and mix the dressing ingredients together. Pour dressing over salad and mix.
    2. Scoop salad into pita bread and roll into a wrap. Enjoy!

    Ingredients
      

    Salad

    • ½ cup chickpeas
    • ½ cup cucumbers chopped
    • ⅓ cup feta cheese crumbled
    • 2 tablespoons red onion finely chopped
    • Artisan lettuce chopped
    • 2 cups Kumato tomatoes sliced
    • 4 ounces Libby's Vegetables Whole Kernel Sweet Corn drained

    Salad Dressing

    • ¼ cup olive oil
    • ¼ cup lemon
    • 1 tablespoon red wine vinaigrette
    • ½ cup sour cream or Greek yogurt
    • 1 teaspoon dried mint
    • ½ teaspoon garlic powder
    • Salt and pepper to taste
    • 4 round pitas or gyro bread

    Instructions
     

    • Assemble the salad in a bowl and mix the dressing ingredients together. Pour dressing over salad and mix.
    • Soften your pita or gyro bread on the stove top by heating for 1 minute on each side. Scoop salad into pita bread and roll into a wrap. Enjoy!
