Ingredients
- 2 tablespoons Olive oil
- 3 Cloves garlic , minced
- 1 onion, diced
- 2 packages Mahatma Chipotle Jasmine Rice
- 1 cup steamed broccoli, optional
- 1 15 ounces can black beans
- 1 15.5 ounces can diced tomatoes
- 1½ teaspoons cumin
- 1 teaspoon salt
- 1½ teaspoons ground black pepper
- 3 cups water or vegetable stock
- 2 cups triple cheddar cheese , divided (leave out 1/2 cup for garnish)
- Fresh cilantro chopped, for garnish
- 2 stalks green onions, chopped for garnish
Instructions
- Preheat oven to 375℉.
- In a large skillet, heat oil and sauté for 5 minutes the onions and garlic until onions are translucent and garlic is fragrant.
- Add the beans, tomatoes, cumin, salt, pepper, and water or vegetable broth. Bring to a boil and simmer covered for 15 minutes.
- Place the ingredients in an oil-sprayed casserole. Open and pour over 2 packages of Mahatma Chipotle Jasmine Rice, steamed broccoli, corn, and 1½ cups of shredded cheese and mix with the ingredients in the casserole.
- Garnish with the remaining ½ cup of cheese.
- Bake for 18 minutes until the cheese is melted. Garnish with fresh minced cilantro and chopped green onions.
