    Skillet-Sautéed Potatoes and Onions seems like such a basic meal, but it’s actually quite underrated in my opinion. My recipe is packed with flavor and is versatile in ingredients and serving methods. Browned potatoes spiced up with aromatic onions and peppers with a juicy tomato and bouillon base makes for an easy and quick lunch. But it’s actually so much more!

    There are Many Reasons to Love this Dish!

    • It’s super easy to put together
    • Can be made quite quickly
    • You can serve it as a main meal, a side dish, or an appetizer
    • Serve it for brunch, lunch, or dinner
    • Change up the vegetables to include your favorites
    • Serve it on a bed of rice, over pasta, or with a side salad
    • Add in some protein: chicken, shrimp, ground beef, or whatever you’re in the mood for

    Best Ways to Serve Skillet-Sautéed Potatoes and Onions

    My family and I love eating Skillet-Sautéed Potatoes and Onions as is. If you decide on serving it right out of the skillet, hot and juicy, eat up with some pita bread or bread of your choice! You can enjoy it with a spoon, no bread necessary.

    If you’re looking to get creative, or maybe you have quite a few mouths to feed, you can expand on the dish. Make your favorite rice and scoop up the sautéed veggies right on top. You can make hashweh rice– rice with seven spices and ground beef- and use it as a base to lay the veggies over. YUM! Fulfilling as a complete meal and would include your source of protein.

    Not in the mood for rice? Boil your favorite pasta and put the Skillet-Sautéed Potatoes and Onions right over it. You could add extra tomatoes, a teaspoon of tomato paste, and a little more water to make a more liquidy base. Pour it over the pasta and you have another hearty meal!

    Avoiding rice and pasta? No big deal. Add your favorite source of protein straight into the dish. Maybe you have some leftover rotisserie chicken and you’re out of ideas on using the chicken creatively. After cooking the potatoes and adding the other veggies, throw the shredded chicken into the mix and voila! A delicious chicken dish that everyone will love. You can add ground beef or beef shanks after sautéing the potatoes for a bit and then add the rest of the ingredients! Shrimp would make another great addition to this dish as well!

    A hearty dish on its own! Looking for something more satisfying? Scoop it over a bed of rice or pasta!

    Tips

    • Make this a vegan dish by using vegetable bouillon cubes!
    • Spice it up with your favorite spices like a sprinkle of cinnamon, all spice, or even chili flakes or cayenne pepper.
    • Swap out veggies for your preferred ones, like use shredded or sliced carrots instead of peppers or some zucchini instead of potatoes. You can even use sweet potatoes instead of regular ones! It’s up to you!
    • Throw in some fresh or dried herbs for extra flavor. Chop up some parsley and throw it on top right before serving or sprinkle some basil or dried Italian seasoning on it.
    • Serve it cold as part of a salad! Yes, throw some lettuce into a bowl or some cold pasta of your choice and mix the Skillet-Sautéed Potatoes and Onions into the veggies. You can squeeze some lemons and a drizzle of olive oil on top for added flavor!

    Ingredients for Skillet-Sautéed Potatoes and Onions

    • potatoes; cubed largely
    • onions; julienne
    • peppers; julienne
    • tomatoes; cubed
    • water
    • olive oil
    • bouillon cube
    • salt and pepper to taste

    An easy and quick meal that the whole family will love!

    Preparation

    1. In a large skillet on medium-high heat, add olive oil and the cubed potatoes. Cover and gently stir until golden brown, about 6 minutes.
    2. Add in the onions and green peppers and let simmer for another 2-3 minutes.
    3. Then add in the cubed tomatoes, bouillon cube, salt and pepper. Mix, cover, and simmer for 10 minutes.
