    Second, you can speed up the cooking process of the sweet potatoes. Prick the sweet potatoes all over with a fork. This will help the heat get inside the potatoes. It will also stop your potatoes from exploding in the oven.


    Third, you should not turn, flip, or rotate the potatoes. They will be cooked evenly. So, leave them be in the oven. They will cook perfectly.

    2. Wash potatoes then brush with olive oil.  Poke the sweet potatoes with a fork, then place on a prepared baking sheet. Place the potatoes in the oven for 40- 50 minutes or until fully baked.
    3. In a large skillet over medium-high heat add 2 tablespoons olive oil, sauté the chopped onions and bell peppers for about 2-3 minutes then add mined garlic, chili powder, salt, and cumin.
    4. Now, add in the ground beef and cook for about 6-7 minutes, or until browned.
    5. Flash boil the broccoli in boiling water for 3 minutes.  Drain then gently stir into the beef mixture.
    6. Cut the sweet potatoes through the center lengthwise and fluff the flesh using a fork. Fill the potatoes with the beef mixture, garnish with green onions and enjoy
