Use a heavy bottomed pot when making this pudding. A heavy-bottomed pot will help your rice cook evenly and without burning.
You can make this recipe with just almond milk. However, I recommend using some coconut milk because it makes the pudding creamier.
Cook the rice pudding slowly and wait until the almond milk is almost completely absorbed by the rice before adding more.
Cooking time will vary depending on the thickness of the nondairy milk you are using.

Steps to Prep
First, to a medium pot add the short grain rice and water. Bring to a boil, then quickly lower heat to simmer for 5 min or until rice is soft and has absorbed the water.
After that, pour in the almond milk. Shake the can of coconut milk then pour it in. Add in the sugar, cinnamon and vanilla.
Finally, mix ingredients together and stir consistently. Once the milk has come to a boil for 5 minutes, off the heat, cover the pot with the lid and set aside for 15 minutes. At this point it will be creamy. The rice would have absorbed some of the milk.
Enjoy warm topped with warmed jam of choice and add your favorite fruit. I used strawberry jam. You can also chill the pudding and enjoy it cold.
