What is a Rice Pudding?

Rice pudding appears to be popular in almost every country around the world. How many different combinations are there if the main ingredients are rice and milk? A lot.

Some recipes include eggs or even butter, while others do not. Various types of milk are used in various recipes (from dairy to non-dairy from full-fat to thin).

The spices used (cardamom, nutmeg, cinnamon, anise, saffron, and so on) and flavors added vary between recipes (vanilla, chocolate, nuts, rose water, caramel, lemon, orange, and so on). Some recipes require baking, while others are cooked on the stovetop.

Ingredients to Make the Best Rice Pudding

To make this vegan rice pudding recipe, you only need several ingredients that you probably have in your pantry.

Rice: Short grain rice is best for making pudding because it is naturally more creamy. However, medium or long grain rice also work.

Almond milk: Almond milk is a great dairy-free milk with a mild nutty flavor and a creamy consistency. It’s a great substitute for dairy.

Coconut milk: Coconut milk gives this pudding a rich, creamy consistency.

Sugar: To sweeten this pudding. You can use any sweetener you want, such as maple syrup or agave, but white sugar will keep your pudding the whitest. (You can adjust the amount of sugar to your liking.)

Vanilla Extract: for flavor

Coconut Milk Vs. Almond Milk

Coconut Milk

Coconut milk is made from the white flesh of mature brown coconuts. It has a rich, creamy texture and a thick consistency.

This milk is commonly used in Thai and other Southeast Asian cuisines. It’s also popular in Hawaii, India, and some South and Caribbean countries.

Coconut milk is high in calories and saturated fat. It also contains many other nutrients.

Almond Milk

Almond milk is a nutritious, dairy-free, vegan drink that has grown in popularity over the years.

Because almond milk has a mild flavor, many people prefer it to other plant-based milk alternatives. It can be used as a substitute for dairy milk, so it may appear in coffee, oatmeal, or baking recipes.

Fortified versions of milk can be a good source of vitamins A, D, and E, as well as calcium, and are a versatile healthy alternative to dairy milk.

Frequently Asked Questions (FAQs)

Do you need eggs for a creamy rice pudding?

No! This recipe does not require the use of eggs. This recipe produces rice pudding that is just as creamy and rich as it would be if eggs were used.

Can you make rice pudding ahead of time?

You can make some and keep it in the fridge for 1–2 days. The pudding can then be served cold or reheated on the stove. If you choose to warm it on the stove, add more almond milk to help thin out the pudding as it heats. It will thicken as it cools down.

Can you freeze almond milk rice pudding?

You can store this rice pudding in the freezer for up to 3 months. Then, when you want to eat it, put it in the fridge overnight to thaw. You can eat it cold, or warm it on the stove or in the microwave.

What are the best toppings for rice pudding?

You can top it with many different things, such as fruit, jam, blueberries, chocolate, walnuts or raisins. I like to top mine with some strawberry jam.

Super Creamy and Dreamy

A healthy, vegan and gluten free snack made with white rice and is cooked in coconut and almond milk.
It’s the creamiest, coziest, most comforting dessert of all!

Top Tips

You can use different white rice varieties, but I recommend short grain rice.

You can add dried fruit such as raisins, dried cranberries, chopped dates, dried mango, dried pineapple, or dried papaya for extra decadence.

Use a heavy bottomed pot when making this pudding. A heavy-bottomed pot will help your rice cook evenly and without burning.

You can make this recipe with just almond milk. However, I recommend using some coconut milk because it makes the pudding creamier.

Cook the rice pudding slowly and wait until the almond milk is almost completely absorbed by the rice before adding more.

Cooking time will vary depending on the thickness of the nondairy milk you are using.

Vegan Rice Pudding Ingredients

  • water
  • sugar
  • short grain rice
  • coconut milk
  • almond milk
  • vanilla extract
  • cinnamon

Toppings

  • strawberry jam /warmed
  • fruit of choice
  • cinnamon (optional)

Steps to Prep

First, to a medium pot add the short grain rice and water. Bring to a boil, then quickly lower heat to simmer for 5 min or until rice is soft and has absorbed the water.

After that, pour in the almond milk. Shake the can of coconut milk then pour it in. Add in the sugar, cinnamon and vanilla.

Finally, mix ingredients together and stir consistently. Once the milk has come to a boil for 5 minutes, off the heat, cover the pot with the lid and set aside for 15 minutes. At this point it will be creamy. The rice would have absorbed some of the milk.

Enjoy warm topped with warmed jam of choice and add your favorite fruit. I used strawberry jam. You can also chill the pudding and enjoy it cold.
