When it comes to baking gluten-free goods, the process might leave you a bit skeptical. Just bear with me!
For this Gluten-Free Zaatar Flat Bread recipe, the mixture of gluten-free flour, baking powder, and Greek yogurt will feel sort of crumbly. But don’t you worry! That’s completely normal!
While kneading the dough, make sure you squeeze the ingredients together so they can combine well. Knead, squeeze, and keep kneading until you have a dough that feels slightly damp and soft.
If your dough still feels dry and hasn’t come together, add 1/2 tablespoon of Greek yogurt at a time until you have the desired consistency.

Although Manakeesh zaatar may be a personal favorite of mine, I wouldn’t recommend missing the chance of getting your mouth full with all the different kinds of delicious toppings!
Let’s start with cheese! Top your flat bread with mozzarella, shredded halloumi, akkawi, nabulsi, or feta, and enjoy a bubbling cheesy bite!
Oh! Here’s a fun combo for you! We Call it the cocktail!
Layer zaatar oil blend on one half of your flat bread, and cheese on the other half! Paired with a mix of vegetables and fresh orange lemonade drink? YUM!

Tips for Satisfactory Results!
Tip 1: Reheat your gluten-free Manakish in the microwave for about 10 seconds (or more), or in a skillet on medium high heat.
Tip 2: You can use full fat or fat-free Greek yogurt for the same results. Be sure to follow the directions and keep an eye on the notes. I have attached a video for visual learning.
Tip 3: If you are not on a gluten-free diet, then you can use regular all-purpose flour, or self-rising all-purpose flour if you prefer.

Sure you can! To achieve that, simply switch your Greek yogurt with vegan Greek yogurt or dairy-free Greek yogurt, and follow the same instructions below.
For storing, leave your bread covered at room temperature for 3-4 days; or you can place them at air-tight container in the fridge for about a week.
I once tried using plain yogurt to make the flat bread. Although my kids enjoyed the taste, I wouldn’t recommend using plain yogurt because the dough stays slightly wet on the inside. It didn’t cook thoroughly. Definitely stick to Greek yogurt.

- Greek yogurt, or vegan Greek yogurt

Follow The Instructions
- In a medium bowl, mix gluten-free flour, baking powder, and Greek yogurt.
- Using your hands, squeeze the ingredients together. Although the ingredients will seem crumbly, squeezing will help combine them to form the dough.
- Once the dough has formed, cover it with a kitchen towel as you grab the rolling pin, parchment paper, and flour.
- Cut parchment paper into 2. You will use one under the dough and one on top of the dough. Place one of the parchment papers on your working table, and sprinkle some flour on it. Divide your dough into four pieces, and roll into a ball using your hands.
- Turn the heat on high to the cast iron for about 3-4 minutes, then lower the heat to low.
- Place the ball of dough on to the floured parchment paper, then roll it in the flour.
- Top the dough with the second parchment paper. Using a rolling pin, gently roll the dough flat but don’t press too hard. Then, turn the parchment paper and roll the dough in width (see video below).
- Mix the zaatar and olive oil to turn into paste.
- Place the dough on heated cast iron, or skillet. Lift and check the bottom of the bread to make sure it is cooked.
- Flip the flat bread, then spread desired amount of zaatar paste. Cook for about 1-2 minutes or until done.
