The word “elote” means “corn cob” in Spanish! So, Mexican Elote is a grilled corn on the cob fully coated in a mayo or cream sauce and garnished with cajun spices, chili powder, cheese, and lime pieces. Elotes or grilled corn on the cob are as commonly sold at street carts in Mexico as sausages are in the USA!

For the stove, add the corn cobs into a large pot and fill up with water until it fully covers the vegetables. Once water is boiled, simmer it on medium low heat for 10-15 minutes and then taste for corns’ doneness.

Sure you can. Just use vegan parmesan cheese and coconut butter.


Tips for the Best Grilled Corn

After corns on the cubs are boiled, you can grill them either on a stove top grill pan, on the outdoor grill, or in the oven. 

If you decide to make grilled corns in the oven, turn broil on high. Put the corns in a pan and then place on the middle level rack of your oven. After that, broil for about 5 minutes on each side or until charred to your liking. 

Also, add more hot chili sauce and butter in case you prefer extra spicy flavor.

Use freshly picked corn because it will give you the best cajun corn!


Ingredients

Corns on the cob: any type of corn on the cob will suit, yellow or white – both are perfect.

Cajun spice: it is a mix of black, white, and cayenne peppers, onion powder, garlic powder, cumin, and salt.

Paprika: gives special taste and bright color.

Parsley: both fresh or dried parsley taste amazing with corn.

Parmesan cheese: it gives extra cheesy flavor to the corn.

Butter: adds lightness and creaminess to balance off the spicy cajun flavors.


Steps to Prep

Start off to peel then place corns on cobs in boiling water for about 15 minutes on medium low heat. 

Once cooked, remove from the water then grill on either a stove top grill pan, outdoors grill, or in the oven. 

For stove top, heat your grill pan on high for a few minutes then lower to medium low. Place and grill the corn for about 3 minutes or more on each side until they are charred to your liking.
