Can I use regular rice?

There are a whole bunch of different types of rice, and each is incredibly delicious in its own way. However, I do recommend using Basmati rice for this recipe. It has a delicate taste, and will give you an authentic bite of the dish.

Do store-bought fried onions work?

Sure! If you feel like saving some time and effort, then buy a bag of fried onions from your local store. It should work just fine.

Can I use pre-packed Biryani spice mix?

Although some supermarkets have bags of pre-packed biryani spices, I prefer if you arrange your own mix. The spices are nothing wild really and can be found in any pantry, so you shouldn’t be worried on running short of spices.

The Ingredients You’ll Need

  • chicken breast
  • long grain rice (Basmati)
  • water
  • bouillon cubes
  • olive oil
  • vegetable oil
  • mushrooms cans
  • onions
  • potatoes
  • eggs
  • salt

Curry Mix

  • mild curry powder
  • paprika
  • garlic powder
  • cumin
  • coriander

Follow The Directions

  • In a large pot, add 4 cups of vegetable oil and fry the thinly sliced/winged onions on high until golden in color. Transfer them to a tray that is lined with paper towel to soak up the oil.
  • Using the same oil, fry the cubed chicken for about 5-7 minutes or until cooked. Remove and transfer them to a bowl lined with paper towel. Cover once cooled and set aside.
  • Fry the cubed potatoes in the same oil until golden. Remove and place in a bowl lined with paper towel as well. Repeat the same process with the mushrooms and place in a line bowl.  
  • Wash the basmati rise, soak it in warm water, and add a pinch of salt for about 10-15 minutes.
  • Mix the spices (curry, paprika, garlic powder, cumin, and coriander). Add about 1 tbsp. of the spice onto the chicken and mix, 1 tbsp. onto the potatoes, 1 tsp. onto mushrooms, and 1 tbsp. onto the onions. Gently mix with hand or spoon. Sprinkle a little salt to each item for flavor.
  • Boil the eggs for 8-9 minutes. Peel the eggs then dry them with a paper towel. Roll them into 2 tablespoons of seasoning mix until well coated.

Cook The Rice

  • In a medium pot, add 1/4 cup of olive oil (or vegetable oil), drain the rice and add it into the pot with 5 cups of water, 4 bouillon cubes, 4 heaping tbsp. of the curry spice mix. 
  • Taste the broth and add salt to your liking. Allow the rice to come to a boil for one minute then cover and simmer for 15-18 minutes, or until rice is done.
  • Allow the rice to cool for 10 minutes then begin to layer.
  • In a large serving platter begin by adding the rice and spread all over the platter.  Top with a layer of the cubed chicken, then a layer of the potatoes, a layer of mushrooms, then garnish all around with the onions. Top with the halved boiled eggs all over.

This Layered Chicken Biryani recipe presents a flavorful authentic bite of one of India's most popular meals!

Ingredients 

  • lbs. cubed chicken breast, medium size
  • 3 cups long grain rice
  • 5 cups water
  • 4 cubes bouillon cubes
  • ¼ cup olive oil, for the rice
  • 4 cups vegetable oil, for frying
  • 3 cans mushrooms, 13 oz
  • 10 large onions, thinly sliced
  • 2 large potatoes, cubed
  • 8 eggs, boiled
  • salt

Curry Mix

  • ½ cup mild curry powder
  • 2 tsp. paprika
  • 2 tsp. garlic powder
  • 1 tsp. cumin
  • ½ tbsp. coriander

Instructions
