Today, I got you this perfect Thick Lentil Soup (Adas Majroush), the one I make most often, and it never fails to please!

This lentil soup is naturally gluten free, easy to prepare in one pot, and is made with simple ingredients that pack a delicious punch of flavor_ red lentils, rice and sautéed onions!

The soup can be enjoyed as is – thick and slightly chunky – or blended to your desired consistency. Either way, it’s a winning recipe!

This Thick Red Lentil Soup is naturally gluten free, easy to prepare in one pot, and made with simple ingredients that pack a delicious punch of flavor_ red lentils, rice and sautéed onions!

The original name of this soup is “Adas Majroush”. This soup, made with no more than a handful of ingredients, proves that cheap and easy can also be healthy and tasty.

 This simple, comforting, hearty soup is one of my favorites. It’s my go-to meal when I need something hearty and healthy, when I’m trying to take a break from overindulging, or when I suddenly find myself tasked with feeding vegetarian or vegan friends on a chilly day.

What’s in this Thick Red Lentil Soup?

This hearty red lentil soup (Shorbat Adas) is made with simple ingredients.

Red split lentils_ The star of this Lebanese soup is red lentils (which appear to be orange lentils). Because they cook quickly, they can be placed directly in the pot.

There is no need for pre-soaking. If you only have brown lentils try my Mediterranean Lentil Soup.

Onions_ You will need one onion for this hearty soup. You can use red or white onions.

Rice_ It is recommended to use short grain rice as it contains a good amount of starch that thickens the soup.

Avocado oil_ Avocado oil is a source of “good” fats if used appropriately.

Butter_ Butter gives Shorbat Adas a rich creamy taste!

Bouillon cubes_  Bouillon cubes add a kick to the soup.

Can I freeze Lebanese lentil soup?

Sure! Once fully cooled, store in an air tight container in the freezer for up to three months. Defrost as required.

How to control the consistency of this red lentil soup

This yellow lentil soup thickens quite a bit. If you prefer a thinner consistency and want to make a larger batch, simply gradually add more stock until you reach your desired consistency.

Can I make it ahead of time?

This soup is ideal for quick meals because it can be made ahead of time. Allow the soup to cool to room temperature before putting it in the fridge. It will keep in the fridge for 4 to 5 days. You can reheat it on the stove or in the microwave.

Can I make this soup in the instant pot?

Sure! Follow the first step sautéing in the instant pot. Then add the lentils, rice, water, and the bouillon cube. Seal the pot and cook on high pressure for 15 minutes.

Can I make this soup vegan?

Sure! Just replace the bouillon cubes with vegetable broth.


Top Tips

You can make this soup dairy free by substituting the butter for extra virgin olive oil.

Red lentils and yellow lentils are best for soup because they cook quickly and soften easily.

You can use vegetable stock to make this soup vegan.

It’s recommended to remove the white froth that comes away when you boil the lentils.

This soup is delicious as it is, but you can certainly substitute broth for water and add other spices to your liking.

Thick Red Lentil Soup (Adas Majroush) Ingredients:⁣

  • avocado oil⁣
  • butter (optional) ⁣
  • onion⁣/ large
  • red lentils⁣
  • water⁣
  • short grain rice⁣
  • bouillon cubes⁣
  • seven spices⁣
  • chopped parsley⁣

Steps to Prep

⁣First, add the oil and butter to a medium pot on high heat. Then, add in the cubed onion and sauté until caramelized. ⁣

After washing and soaking the red lentils and rice for 10 minutes (in one bowl), drain the water then add them to the pot. ⁣

Pour in the 6 cups of water, bouillon cubes, salt, a and pinch of 7 spices. Allow to boil, then simmer for 20 minutes, stirring occasionally.

Finally, garnish with chopped parsley and enjoy alone, with veggies or pita bread.

  • 3 cups red lentils

  • ½ cup parsley, chopped

Instructions
