How To Prepare these Cookies?

  • Preheat oven to 350°F 
  • Line a cookie sheet with parchment paper
  • In a bowl of a stand mixer, add the coconut oil, honey, coconut brown sugar, eggs, vanilla and whisk together.  Clean the whisk off with a spatula then add in the almond flour, baking powder and mix all together using a spatula until well combined. 
  • Fold in the chocolate chips with a wooden spoon until well combined. 
  • Using a spoon, scoop out dough and place a large spoonful on parchment paper. The dough may be a tad sticky; you can use your fingers to slide the dough down onto the baking sheet. 
  • Bake between 13-15 minutes or until done. The dough will be soft.
  • Allow the cookies to cool for 10 minutes.

What is Better to Use, Almond Flour or Almond Meal?

Although ground almonds are the basic ingredient in both almond flour and almond meal, there are a few significant differences between the two. Almonds that have been blanched and ground into a finer flour are usually used to make almond flour. However, unblanched almonds are typically ground into a coarser flour to make almond meal.

In many recipes, you cannot substitute almond meal and almond flour, but you may with these cookies.

Ingredients 

  • 2 ½ cups almond flour, blanched
  • 2 eggs
  • ¼ cup coconut brown sugar, or replace it with honey
  • ¼ cup honey
  • ¼ cup coconut oil, melted
  • 1 teaspoon baking powder
  • ½ cup chocolate chips
  • 2 teaspoons vanilla extract

    This recipe has become a staple in my house hold. It is pretty much the only cookie I bake by my children’s request. They absolutely love this recipe and say it is the best chocolate chip cookie recipe I have ever baked.

    It has been great even for breakfast sometimes since it is so clean.
