Generally, Kibbeh also known as kibbi, kibba, or kuba is a popular Middle Eastern food.

It is one of Lebanon’s national dishes! Using a base ingredient of bulgur, Kibbeh comes in many forms: fried, baked, raw, warm, or cold!


What is kibbet Adas?

The Lebanese lentil kibbeh is a famous delicious and nutritious traditional vegetarian kibbeh in the south of Lebanon, as it is known in the Syrian city of Aleppo.

kibbet Adas or cooked lentil with caramelized onion dip is an excellent Vegan Dip for meatless days. It’s a so healthy lunch or dinner.

This is perfect for any and many occasions! You can make it either in winter or in summer. It is a good choice for any meal you make, it’s so to take a lunch and also good for dinner.

No, I don’t recommend using other than red lentils in this recipe because the dip will not be soft and smooth.

To store this vegan dip, wrap it tightly with plastic wrap and store it in the refrigerator. It stays fresh for up to a week in an air-tight container.

  • red lentils
  • water
  • bulgur
  • olive oil
  • medium onions
  • cumin
  • salt

Instructions

First, wash and drain lentils. Now, place the lentils in a medium pot with 7 cups of water, bring to a boil, then lower to medium heat uncovered for 20 minutes.

Meanwhile, in a medium skillet add 1/4 cup of olive oil. Sauté the cubed onions for about 10 minutes or until caramelized.

After that, bring the heat to low for the lentils. Now the lentils are cooked and soft; so add fine bulgur. Occasionally stir for 5-8 minutes until bulgur has softened and soaked up most of the liquids.

Next, add to the cooked lentils the caramelized onions, cumin, and salt and mix well. Taste and adjust the flavor to your liking.
