Well, potatoes soak any seasoning you add and give it back tons of flavors in one bite. You will get the best-tasting roasted potatoes.

Rich olive oil, rosemary, garlic, and salty parmesan are the ultimate combo of flavors for potatoes.

Once baked, you can feel the crispy outer layer of your potatoes and the fluffy, tender inside. They will disappear in a glance!

What makes this recipe even better is that it is perfect for meal prep. So, you can prepare the baking dish and cover it with plastic wrap the night before. Upon serving, take it out around 30 minutes ahead and toss it in the oven.

Roasted garlic potatoes pair with many dishes to make a rich and delicious dinner table. Serve them as a side dish next to some Creamy Broccoli and Mushroom Soup, Sweet Potato Cajun Rice Bowl, and the Roasted Eggplant with Burrata Salad Recipe. Yummy!

Tips and Tricks

Wash and dry the potatoes well, then cut them the way you prefer. You can cut them in halves, quarters, or even thick slices. They will come out delicious anyway.

Scoring potatoes ensures even cooking for the potato center. Cut each in half, then make shallow slits using a sharp knife.

If you will not serve crispy potatoes right away, do not cover them or they will become soggy and lose their crispiness.

After they are done, you can broil the potatoes at high temperature for 2-3 minutes to get an extra golden color.

Frequently Asked Questions

What can I do with garlic parmesan potato leftovers?

Though it is unlikely to happen, store leftovers in an airtight container in the fridge up to 5 days. Reheat them in the oven so can regain their crispiness.

Do I need to parboil the potatoes before baking?

Using baby potatoes, dividing them into halves, and then scoring them, help in baking them well. If you feel like they are not tender enough, you can leave them in the oven for a few more minutes. If baby potatoes are not really small, you can cut them into quarters to ensure they will cook thoroughly.

Should I wrap baked potatoes in foil before baking?

Absolutely no! Wrapping the baking dish will keep the moisture inside because the potatoes will steam. So, you will end up with soggy potatoes instead of crispy ones.
