  • light brown sugar (or coconut sugar)
  • pure vanilla extract
  • strawberry jam

Follow The Instructions

First, preheat the oven to 350°F. Line an 8×8 pan with parchment paper or cooking oil spray.

Second, in a medium bowl, combine the dry ingredients consisting of flour, oats, salt, and baking soda.

Next, in a small bowl, whisk the coconut oil or butter (melted), brown sugar, maple syrup or honey and vanilla until all is well combined. Pour over the dry ingredients and mix well using a spatula. Remove about 1 cup from the cookie dough and set aside. 

Then, place the remaining dough into the prepared pan and press it down using your hands until you have an even layer. Bake for 10 minutes. 

Remove from the oven then spread the jam on top of the baked cookie.

After that, sprinkle the remaining cup of cookie dough over the jam and bake for about 14 minutes, or until the top is light golden brown.

Finally, allow it to cool for about 15 minutes, then cut into squares. Enjoy warm or cold!

Ingredients 

  • 1 cup all-purpose flour

  1. ˆI’ve made these once and they were delicious. One question: what makes them higher in protein? Also I see maple syrup or honey listed in the ingredients. But after re-reading several time, I don’t see that ingredient in the directions. Did I miss something?

    1. Hi Susan, with this recipe we used oats instead just flour and oats have a good amount of protein in them 🙂 And THANK YOU! In the instructions you will find honey or maple syrup after brown sugar!
